Green Tea originated in China, but is now grown in other countries across East Asia. It comes from the same plant as black and oolong teas (Camellia sinensis), but is not withered or fermented for as long. Green Tea is the least processed form of tea, meaning that it’s rich polyphenols.
The use of the plant is extremely important to Chinese history and is considered by many to have helpful properties. It is mentioned in ‘The Classic of Tea’ written by tea master Lu Yu between 760 and 762. Lu Yu was considered the Sage of Tea for his contributions to tea culture. The history of green tea is centuries old, with many uses being attributed to it.
Matcha is a product of green tea that originates from East Asia. Matcha is a very fine powder made from specially grown and processed green tea leaves. The leaves are shaded for the last weeks before harvest, which means they produce more theanine and caffeine. The shading process also means that the leaves have more chlorophyll, which is what gives matcha its distinctive bright green colour.
The traditional Japanese tea ceremony centres on the preparation of matcha with water to make hot tea. Matcha is now a common ingredient in many dishes as a flavouring or food dye, such as mochi, noodles, and ice cream.
